Asian Sprout Salad

 

INGREDIENTS:

  • 1 cup Aussie Sprouts Crunchy Combo

  • 100g Aussie Sprouts Bean Sprouts

  • 50g Aussie Sprouts Pea Shoots

  • (cut in half & stalks discarded)

  • 100g sugar snap peas

  • ½ bunch chives cut into 2cm lengths

  • 1 stick celery halved, sliced into 4cm lengths

  • ½ cucumber quartered lengthways

  • and sliced into 4cm lengths

  • Handful of coriander leaves

  • 1 tbsp shredded mint

  • 1 tbsp sesame seeds, to finish

 

DRESSING:

  • 2 tbsp light soy sauce

  • 2 tbsp rice wine vinegar

  • 2 tbsp peanut oil

  • 1 tbsp mirin

  • 1 tbsp finely sliced red chilli

  • 1 tbsp fresh lime juice (optional)

INSTRUCTIONS:

  1. Combine all salad ingredients in a large bowl and toss gently.

  2. Top with sesame seeds.

  3. Combine all dressing ingredients and mix well.

  4. Lightly drizzle dressing over salad and serve.
